Simplest Garden salad

Needless to say that this is one of the simplest, freshest and most satisfying way to make the most of what summer has to offer. Just go with the best ingredients you can get and you shouldn't be disappointed.

Serves 2
A handful pine nuts
2 heirloom tomatoes
1 avocado
1/2 burrata cheese or good buffalo mozzarella
A few fresh basil leaves
Sea salt
A drizzle best quality extra virgin olive oil

In a dry pan over medium heat toast the pine nuts until golden brown. Set aside.

Slice the tomatoes and avocado and tear the burrata. Divide them into 2 plates before scattering the pine nuts and basil over. Sprinkle each salad with a little sea salt. Drizzle over some olive oil and devour with a good French baguette.
